There's not too much.
A faster AFC would be nice for shooting action pictures of my dogs, and less banding and noise at higher ISOs - but without losing details at it is the case at the GH1 and - as it seems - the GF1. In this case, I'd prefer the details as I don't see many reasons for using more than ISO 800.
And the GH1's multi-format sensor would be a nice addition.
And I would love it to have the Olympus JPEG engine as the Olympus JPEGs are the best you can get. Unfortunately, I don't see this happening.
But apart from that...?

Okay, there's always room for improvement in every area, but to be honest, I'm rather happy with my G1 as it is.

How about a better EVF?

As I said: there's always room for improvement. But for me, the EVF is quite nice  as it is - particularly with fast lenses. Nonetheless, I wouldn't mind another step forward.

I like HDR, but the .5 stop per frame limit means to get my usual +/- 2 f stops I hjave to take 7 frames instead of 3. This makes it virtually impossible to take HDR with moving subjects such as water or even trees on a breezy day or hand held shots. I don't see why this couldn't be cured by a firmware update - I live in hope.

That's not to say it's impossible if there's a handy wall to rest the camera on

But 3 frames would be soooo much easier than 7.

A higher frame rate would be nice.
